Simple Mee Rebus Recipe. | My father loves to eat Mee Rebus and whenever I and my husband at Bentong, he always wanted us to cook it for him. It's not easy to find a Mee Rebus that is great for his preference but then my husband Mee Rebus is good for his taste.
There are many versions of Mee Rebus in Malaysia if you know. The Mee Rebus Johor/Jawa is one of the famous versions with yellowish color and the clear version is the Mee Rebus Terengganu. Mee Rebus Terengganu is definitely the simple ever version where you don't need the blend anything and just use all in one method.
But anyway my version of Mee Rebus is slightly different from the Mee Rebus Johor because I didn't add any curry powder to it. Somehow everyone in the family loves our version of Mee Rebus and approves it. haha
So here it goes my simple recipe of Mee Rebus :
Ingredients:
Ingredient A (all blended)
1 handful of boiled dried chillies
3/4 cup of dried shrimp
5 large onions
3 cloves of garlic
a little ginger
3 tomato
Ingredient B
sugar 5 tbsp
salt
3 tbsp chillies and tomato sauce
3 red sweet potatoes in boiled and finely blended
Ingredient C
500g of meat - boiled it and reserve the broth
Other ingredients
Yellow Mee
boiled eggs
Sawi (cut and sliced)
green and red chilies (slices)
chinese parsley
scallions
fried onions
tauhu
Lime
How to make Simple Mee Rebus
- Saute ingredient A until the paste is cooked enough
- Add meat broth and bring it to a boil. You also can add in meat stock(cube) to add more flavor to it.
- Add ingredient B and season it well. You can add in the meat into the gravy or sliced it and add in when you wanted to plate it later
Tips: The gravy should be cooked for a long time over low heat so that the gravy will be well mix and thick. The taste should be sweet, spicy and sour.
Who love the original recipe with curry powder can add in about 3tbsp curry in it along with the blended ingredients. Anyway, this is my version of mee Rebus that I like and my father even like it cook with the gearbox in the gravy. Yup, it taste much better.
Have a great school holiday everyone and let's cook for our family during this school holiday.
