If you love Nasi Lemak and have been travel around Malaysia, you will realized not every state have the same sambal in their Nasi Lemak. Even the rice also different where some add onion and ginger in it, and sometimes it just plain rice with coconut milk and Pandan Leave.
But today, I would like to share my simple and easy Nasi Lemak recipe that I made for my small business. It is easy and of course delicious. So here it go from the basic rice.
1. Rice/Nasi Lemak
Ingredients :
Rice
Coconut milk + water
Pandan leave
Salt
Method :
1. Cleanse the rice and strain.
2. Add water and coconut milk just like the same amount you cook usual rice. Then add salt. Taste it, if it is salty then your Nasi Lemak will turns out nice.
3. Add Pandan leave, and on rice cooker. :p
4. When it cook, add oil about 3 tbsp on top of it and stir just a bit, and you're done.
2. Sambal Nasi Lemak
Ingredients :
2 cup of dried chili (adjust it based on your spice preference)
5-7 nos of onion
5 clove of garlic
2 nos of dried tamarind slices
5 tbsp sugar
3 tsp salt
Seasoning if you like
Method :
1. Boiled dried chilli with hot water until it soft. Strain and blend with onion and garlic.
2. In hot wok, add oil and add in the blended item.
3. Cook chilli until the oil appear on top of it. The fasten the progress you can add sugar first and don't forget to add in the dried tamarind slice in it.
4. Stir it regularly to avoid it burn at the bottom. A good Sambal have to cook well done-approximately about an hour to ensure the chili cook well.
5. Season to taste.
Tips : Before you cook your sambal you can fried the anchovies first and use the same oil to cook your Sambal. You also can add tie Pandan Leave in your Sambal and also add in some Soy Sauce to make your Sambal darker. My mother in law love to use Gula Nisan rather than normal sugar in her Sambal. It taste great too.
Hence that is the simple way to make Nasi Lemak that is good for business. It does save cost and easy to make. This version of Nasi Lemak is well known around Malaysia but the Sambal Nasi Lemak like in Pahang is actually much harder to make. It's not sweet like the recipe I share here, but it sour and salty. I love it too, especially when my mom make it.
Wanna know the other version of Sambal Nasi Lemak? I should share it soon if you requested it. Till then, stay safe everyone.
p/s : I can't wait to Balik Kampung since the percentage is 88% already. Wee!
